Cow parsley Anthriscus sylvestris

Fine, anise-like flavour, good in soups and salads. Important: confusion with poisonous umbellifers is possible.

Season: Apr · May · Jun · Jul
Habitat: Verges, forest edges, damp meadows

Safety: Pick umbellifers only when the species is unambiguous. When in doubt, leave it.

Look-alikes

Poison hemlock – Very poisonous and easily confused. Hemlock is purple-spotted and smells of mice.
Rough chervil – Confused with it; described as stupefying. When in doubt, leave it.

Plants are hints, not guarantees. Mushrooms only grow where weather, soil and trees fit together.
